Even though I love breakfast foods, I typically end up eating something along the lines of cereal, toast, or yogurt each morning. It’s not because I don’t want eggs, bacon, French toast, or pancakes, because I really, really do. I usually just don’t have the time to whip up an elaborate meal – especially on weekdays.
A few weekends back, I woke up about an hour before my alarm and immediately knew exactly what I wanted to do: make chocolate chip pancakes. I hadn’t eaten pancakes in a long time – let alone chocolate chip infused ones – and they were just what the doctor ordered.
